A horse's temper stat determines how long it will take to tame, but you can speed this process up by feeding the it. Once tamed, press the inventory button while on the horse to view its own inventory, in which you can equip a saddle to control it's movements, and horse armour for protection.

To breed a Minecraft horse, simply feed two adult Minecraft horses a golden apple or golden carrot each, and they will enter 'love mode', demonstrated by red hearts around them. Shortly after, a foal will appear next to them.
